White Chocolate Strawberry Pie

Kim Jackson's White Chocolate Strawberry PieGraham Cracker Crust for 1 9″ pie:

  • 1 ¾ C. graham crackers (12), crushed
  • 2 Tbsp. packed light brown sugar
  • ½ teas. cinnamon
  • big pinch of salt
  • 6 Tbsp. melted butter

Preheat oven 350 degrees. Lightly butter pie plate. Combine crumbs, sugar, cinnamon and salt in large bowl. Mix. Add butter, mix and spread and press in pan. Refrigerate 5-10 minutes. Bake 7 minutes. Cool. Refrigerate before adding filling.

Filling:

  • ¾ C. white chocolate chips (3 cubes of bark) melted, cooled
  • 8 oz. pkg. cream cheese, softened
  • 5 Tbsp. sugar
  • ⅓ C. plain or vanilla yogurt
  • 1 qt. strawberries

Glaze:

  • ½ C. white chocolate chips, melted

With mixer, beat cream cheese for 4 minutes until light and fluffy. Gradually add sugar and continue to beat. Stir in melted white chocolate, then yogurt. Spoon in chilled crust. Cover with foil. Chill 2 hours. Place whole strawberries on top, drizzle white chocolate chips. Serve immediately or within 1 hour.
